Pre-order: the new Oscietra batch
The new batch was tinned on 2 October 2026, with a use-by of 2 February 2027, and lands in our Sydney cold room this week. You can order now. First dispatches: Sydney same-day from Thursday 29 October, Express Delivery from Monday 2 November (metro Melbourne receives it Wednesday 4 November, after Cup Day) and ★ Refrigerated Courier from Tuesday 3 November, delivered by Friday 6 November. From then on every order follows the normal cut-offs below, and checkout shows the exact dispatch and delivery day for your address.
Delivery options
Checkout shows only the options that can genuinely reach your address, with the delivery day for an order placed right now. Refrigerated Courier and Sydney same-day delivery are free on every order of $199.95 or more. Express Delivery is free on every order of $299.95 or more where Refrigerated Courier is not offered; where both are offered, Refrigerated Courier is the free option and Express Delivery stays $39.95. Below those amounts, each option is a flat $39.95. Nothing else is added at checkout: no handling fee, no packaging fee, no packing surcharge.

The best way to receive caviar. Your order travels in refrigerated trucks, from our door to yours, by road freight to every destination.
Order by Monday 3pm AEST and it is dispatched the next day, Tuesday, for delivery by the end of the same working week. Orders placed after the cut-off are dispatched the following Tuesday. For example, an order made at 6pm on Thursday 12 November is dispatched on Tuesday 17 November, for an expected delivery on Thursday 19 or Friday 20 November.
Refrigerated Courier reaches Sydney metro, the Blue Mountains, the Southern Highlands, Goulburn, Canberra, Wollongong, Batemans Bay, the Central Coast, Newcastle and the Hunter, Port Macquarie, Coffs Harbour, Dubbo, the Central West, Melbourne metro and Brisbane metro. Checkout offers it only for suburbs that can be delivered by the Friday of the dispatch week.
- Please provide accurate details when ordering. Your mobile number is used for SMS alerts about your scheduled delivery, so it must be a mobile, not a landline, and your address must be correct for the driver to find you.
- We cannot edit or change the delivery address once your order has been dispatched.
- We cannot deliver to PO Boxes. Please provide a street address only.
- We cannot deliver to high rises, apartments, units or any other property without a suitable place to leave your order. Please choose an address with a safe and suitable place to leave it in case you are not available on the delivery date.
Sydney same-day by GoPeople
Across our Sydney courier zone we deliver same day by 5pm, Monday to Friday, for orders placed before 12pm AEST. Order after 12pm and your tins go out on the next delivery day. Same-day is $39.95, free on orders of $199.95 or more, and offered where our courier can reach you directly.
Express Delivery (isothermal packaging with ice packs)
Everywhere else in our network, orders travel by Express Delivery, next business day, for $39.95, free on orders of $299.95 or more where Refrigerated Courier is not offered. We only sell this option to suburbs reached in one business day from our cold room, never two-day lanes. If your suburb is not one of them, checkout will not offer it, because a tin that arrives late is not a tin we are willing to send you.
Express Delivery orders are dispatched Monday to Wednesday only. Order before 11am AEST and your tins leave that day. Orders placed after Wednesday 11am are held in our cold room and are first out the following Monday, so caviar never sits in a depot over a weekend. We do not dispatch or deliver on public holidays.
Hand-delivered by a co-founder
For the moments that cannot wait, one of our two co-founders will fly your order to you on the next available Qantas flight and hand it over in person, any day of the week, for a flat $2,000. Orders placed before 9am AEST are delivered the same day by 5pm; orders placed after 9am are delivered the next day by 5pm. This option only appears at checkout when a flight can get your order to you in time.
Delivery updates and unattended orders
Every delivery option sends its updates by SMS, so please give a mobile number at checkout, not a home phone or landline.
We are not responsible for any damage caused by an order being left unattended at the premises. If you are not available, please arrange for someone to collect it as soon as it is delivered. Caviar needs to be refrigerated.
Packaging
Same-day and Express Delivery orders leave our cold room in isothermal packaging with ice packs (a thermal-lined box with a wool liner and gel ice packs), built for an overnight transit, which is why we only send them to suburbs we can reach the next business day and never ship them into a weekend. Refrigerated Courier orders travel in refrigerated trucks the whole way. Put your tins in the back of the fridge as soon as they arrive.
Tracking
Every order is tracked, and you receive delivery updates by SMS to your mobile. Every order leaves the KHAVIYAR caviar cold room at 24/10 Anderson St, Banksmeadow NSW 2019.
Storage
Put the tins in the back of your fridge as soon as they arrive, never the freezer. Freezing ruptures the pearls and you get the flavour back as a paste.
Once opened, keep the tin inside a sealed airtight container in the fridge, press the surface flat with the back of a spoon before you close it, and finish it within 24 to 48 hours. Serve the tin on crushed ice and use a mother of pearl spoon, because metal dulls the flavour the moment it touches the roe.
