When will my pre-order arrive?
The new Oscietra batch, tinned 2 October, arrives in our Banksmeadow cold room in the last week of October. Sydney same-day deliveries start on Thursday 29 October. Next-day MailPlus Premium Express dispatches from Monday 2 November. ★ Refrigerated Delivery by CoolCartons, our recommended option, is dispatched on Tuesday 3 November and delivered by Friday 6 November. Your tin leaves on the first dispatch day for the option you choose at checkout, and tracking comes by SMS.
Why pre-order rather than wait?
Our September batch sold out in under three weeks. A pre-order puts your tin in the first dispatch from this batch, and you choose your size before anything is spoken for.
Is it really fresh?
Yes. This batch of Oscietra was tinned on 2 October 2026 and carries a use-by of 2 February 2027. Every tin is unpasteurised and has never been frozen. It rests in our Sydney cold room at 0 to 4 degrees. With ★ Refrigerated Delivery it stays in a 4°C cold chain all the way to your door, and same-day and MailPlus orders leave in a thermal box with ice packs and never sit over a weekend.
How much do I need?
30 g serves one. 50 g serves one to two. 100 g serves two to three. The new 250 g tin serves six to eight and the 500 g twelve to sixteen, for a Melbourne Cup lunch or Christmas. Any two tins take 15% off in the cart with PAIR15.
How is it delivered?
Sydney metro: same-day by 5pm for orders before 12pm, Monday to Friday. Refrigerated Delivery: order by Monday 3pm AEST, dispatched Tuesday in a 4 degree cold chain, delivered by Friday. Everywhere else: MailPlus Premium Express next business day for orders before 11am AEST, Monday to Wednesday. Street addresses only, no PO Boxes or Parcel Lockers. Refrigerated and Sydney same-day delivery are free on orders of $199.95 or more, next-day MailPlus from $299.95, and otherwise $39.95. Delivery updates are sent by SMS, so please give a mobile number at checkout, not a landline. We are not responsible for any damage caused by an order being left unattended at the premises. If you are not available, please arrange for someone to collect it as soon as it is delivered. Caviar needs to be refrigerated.
How long does it keep?
Unopened, keep it at the back of your fridge, between minus 2 and 2 degrees, until the date on the tin. Once opened, eat it within 24 hours.
Is it real sturgeon caviar?
Yes. Our Oscietra is Acipenser gueldenstaedtii, the Russian sturgeon, from CITES-registered aquaculture farms. The species and the CITES code are printed on the back of every tin.
Where is it from?
Our sturgeon are raised in sustainable aquaculture farms, primarily in China, and every batch is CITES certified. The tins are graded, labelled and dispatched from our cold room in Banksmeadow, Sydney.
Can I send it as a gift?
Yes. Add the address of the person receiving it at checkout and leave a note in the cart. Every order travels in a thermal box with ice packs and live tracking, so you will know the moment it lands.
What if something is not right when it arrives?
Message us the same day on bump@khaviyar.com.au or 0430 083 914 with your order number and a photo, and we will make it right. Caviar is perishable, so we cannot accept returns once it is delivered, which is why we only ship where it arrives in our cold chain or by the next business day. Please be home for delivery, or have someone ready to put it in the fridge.
